Welcome back to Wednesday wellness! This week, we're bringing some serious flavour to your plate with a mouthwatering 🤤 Crispy Chickpea Salad, created by the incredible Belinda Black 👩🍳.

Recipe: Crispy Chickpea Salad 🥗✨
Ingredients:
1 cup cooked chickpeas, drained and rinsed
1 pinch paprika
1 x cooked brown rice
1c cooked black rice
2 large handfuls baby spinach
1 handful picked mint leaves, about half a bunch
1 lemon, juice only
1/2c extra virgin olive oil
sea salt and pepper
1 drizzle honey
Method: 🥣
Heat oven to 220c
Add chickpeas to a baking tray lined with bake paper
Drizzle generously with olive oil and sprinkle with sea salt
Bake for 20mins or until crispy, then remove and toss with paprika
In a mixing bowl, toss together the rice, spinach & mint
In a jar with lid, add lemon juice, olive oil, salt 🧂 honey, shake it up!
With two hands lift the tossed salad out of the mixing bowl onto your favourite platter, dress with the shaken dressing and scatter with the crispy chickpeas, season to taste and serve!
